Is it possible to get a nutrient/vitamin deficiency from ejaculating too frequently?

Yes. No. You can't.

Your testicles create semen at a certain rate. When the semen gets old it breaks down and exits through urine. Whether you ejaculate or not won't affect how much nutrients your testicles are using.

Are you sure this is the case?

Do you have any proof that this indeed is what happens either way?

Not really; that's the prostate gland's job.
However the only plausible mechanism by which it would be possible to get any nutritional deficiency would be if you were too busy ejaculating to remember to eat.

I thought I read there's a feedback loop involved, limiting how often you can go.

You better make sure you switch hands occasionally, you wouldn't want asymmetric arm muscles...

I'd just add to this very real risk that Moontanman pointed out that if you're going for some kind of olympic record, it does make sense to put protein into your body. Get yourself some chicken or turkey for protein along with some fresh spinach to get that iron in and some rice for the carbs and by all means proceed.
