Began tapping trees for making syrup. Today we tapped five Silver Maple and eight Black Walnut trees. Later this week we'll tap about 10 Black Maple trees.

I had Canadian maple syrup this morning but the container only says "product of Canada" so I don't know where it came from. My wife made buttermilk waffles. Mmm Mmm Good!
I really like the syrup I get here. Whereas your syrup is from sugar maples and has what I would call kind of a 'pure', sweet taste, the syrup I get from the silver & black maples, and from the walnut trees, seems to have a more complex flavor. Some after tones like you might get with different whiskies. I wouldn't necessarily say one is better than the other, they are just slightly different.
We tapped the trees at about dusk last night and by this morning we already had 10 gallons of sap. Looks like it might be a good year!
