Why did some humans develop this?

Do you mean rhinophyma, related to/associated with rosacea?

I read somewhere once that, besides the obvious heritable traits, the overall shape of the nose is dictated by ancestral environment, factoring in things like temp/humidity, dust/pollen counts, and local vegetation.

My own guess would be that it's to do with Neanderthal dna. The last stronghold of the Neanderthals was around Southern Europe/North Africa, and that's where the pointy noses seem to be historically clustered. Sub Saharan Africans don't have any Neanderthal dna, and usually have flat noses. Eskimos and Inuit have flat noses, so if it's an adaptation to the cold, it takes a long time to happen.

Of course, that's just a guess, I'd give it no more than ten percent chance of being right.

"usually"

And yet, there are so many different groups across Sub Saharan Africa and many of their noses aren't that flat and the genetic variety is so widespread across the continent, that broad and sweeping generalisations like that are highly amusing...
