"Popcorn" is a special type of corn, I've grown quite a bit of it, it is sold in stores and looks rather pointed compared to regular corn...

There is moisture (water) inside the seed kernel. When it is heated, that moisture turns to steam and exerts an outward pressure. This ultimately causes the shell to split and the corn to "pop" outward.
