We have that some stars use the Carbon-Nitrogen cycle. Since this produces again the isotope it started with, why don't these type of stars last forever?

Because nothing in this  physical  world  lasts  forever
having a limited  lifetime is one of the  fundamentals of  being here in this world

 

I mean Time  is  one of the  fundamentals  and  elements  of this  physical  reality  we are in

And  you  know the  element  of time its self  means  that  the  things  that  ( time )  is  applied  on  are  not eternal
