We have that some stars use the Carbon-Nitrogen cycle. Since this produces again the isotope it started with, why don't these type of stars last forever?

Those are catalysts for proton fusion, producing helium. Eventually you don’t have enough fuel for continued fusion in this process.

Because nothing in this  physical  world  lasts  forever
having a limited  lifetime is one of the  fundamentals of  being here in this world

And  you  know the  element  of time its self  means  that  the  things  that  ( time )  is  applied  on  are  not eternal
