Is it possible to adjust a rocket ship while in space? If so we could study the Kupier belt and see exactly. How long it is so we can know exactly how high to adjust the ship before entering the belt and avoid hitting asteroids to reach the outer parts of space instead of going right through the belt and risking a crash.

Yes. As noted by Swanson all research craft have one or other form of propulsion for making small adjustments to their position., attitude and trajectory.

Science fiction movies and TV programs have a lot to answer for. Space is mainly empty even in the asteroid belt, the Kuiper Belt and the Oort cloud. You have very little chance of running into anything. Passing 'above' the belt is not necessary to avoid collisions.
