Does anyone know about the digestive and excretory systems for a non-ruminant (monogastric) animal?

I need to write a Description of the structure and function of the non-ruminant digestive and excretory system. I have written what I know but I'm struggling.

There are gazillions of variations out there (I am not even sure why ruminants are singled out). Surely it is way more than a single post could ever cover.
