Why is water a good material to use in a calorimeter?

And it is cheap, non-toxic, non-corrosive and non-flammable.

water is a good solvent for a large number of copounds whose specific heat is to be determined.Water is cheap & non-dangerous solvent too.

it`s also predictably Constant too, and that helps keep the Math easy (I`m always in favor of that).

afterall it IS water than the Metric system is largely based upon also :)
