Photon interactions, neutrinos, beta decay and Relativity

Looking at pair production, beta decay, and photon interactions and then looking at the quark model of nuclear composition I can't help but see some conflict.

 

Pair production and most photon interactions have nothing to do with the quark model. Frankly, at this point I stopped reading.
