Extracting Vitamin C

Featured Replies

I need to extract vitamin C from fruits/veggies, is there an easy way to do it? If so, can I have a link to a method or something to help me do it.

It's difficult since ascorbic acid is easily oxidized and damaged by heat. There are some products you can get in health food stores that claim to be 100% pure Vitamin C, not borne in salts or other carriers. I'd try that before anything else.

Here's a PubMed abstract entitled Nitrogen-protected microwave-assisted extraction of ascorbic acid from fruits and vegetables.
