why are all the protons in the middle with the electrons moving around them?

protons are over 1000 times heavier. so they'll move less.

 

much the same as the sun is at the center of the solar system because its so much more massive than the rest (and its only 100 times heavier than the nearest competitor(jupiter))

general relativity sort of breaks at sub atomic levels, but the gravitational attraction is miniscule, it is the electrostatic attraction that counts.

 

but yes, it is the extra mass of the nucleus that keeps it in the center.

You can see the effects of this by replacing the proton with something less massive. Muonium and positronium (replace the proton with a muon and positron, respectively) have different energy level structures than hydrogen, even though the electrostatic binding is the same, because of the increased motion of the less massive particles.
