I was wondering if it is possible to monitor the electrical impulse sent down the optic nerve from the eye?

Yes, it is, and this is something we've been able to do since the 1940s. We've obviously gotten better at it since then, but it's been done for nearly 70 years already.

yep, and by looking a the visual processing center we can even get a picture(very low quality though).
