I want to get into airforce because of my fascination of fighter jets and aviation but I don't intend to stay too long. I've also long aspired to become a physicist and am concerned if I would be able to pursue physics after that

I got my masters and doctorate in physics after a tour of duty in the navy, and one of my fellow grad students had done a tour in the air force, so it’s definitely possible.
