I have an air dehumidifier and it has a water tank, if I turn off the dehumidifier at night and keep the water in the tank, will that water evaporate and oxidize the electronic part of the dehumidifier?

It depends on what the electronic parts are made of and how exposed they are to the water, but the water will evaporate and will interact with any substances around it. With that said, the same thing happens whether or not the humidifier is running or turned off. 

Any reasonable quality control at the design and production stages would eliminate any such flaws.

Unless it's homemade?

You’ll be fine. Would worry more about rust on the cooling coils which condense the water out of the air

That has nothing to do with whether or not you empty the bucket or shut it off at night 

this device uses a rotary hermetic compressor and a motor fan and the electronic board, if I turn this device off at night and it has water in the tank this water during the night will start to evaporate and humidify the air next to the device, starting the oxidation of its internal components ?

Feel like I’m repeating myself. Depends on how it’s constructed and what materials were used
