How could I determine the presence of carbohydrates, proteins, pectin, and lipids and fats by using the enzymes amylase, pepsin, pectinase, and lipase?

Couple the enzyme reaction with another that produces something that a spectro will pick up.

yeah... like skye said, use a photospectrometer and some substance or another that will react with the molecules you listed.

Must you use enzymes? There are some simple methods to test for the substances.
