I'd like to know whether sulphites is soluble in water...

depends on the sulphite. some are and some aren't

 

Yup, as with anyhting it varies form one to another (Nothing is as easy as they all are or are all not unfortunatly) :)

 

You may try a Google search if you are looking for a specific compounds solubility :)
