Very strange reaction between cinnamon and alcohol

I put cinnamon in my cappuccino every morning. If I don't drink it in 15 minutes the cinnamon forms that gooey mess. Stirring it in doesn't work. I can't get it to go through the screen on my sink drain even after running hot or cold water over it.
