you could write entire libraries worth of books on both. if you're question really is that broad then go to wikipedia.

 

if you want something from us then i suggesst you narrow down your question.

I was specifically referring to food safety hazards that can occur at any stage of the food chain. Adequate knowledge in microbiology is essential.
