How does pH affect the formation of salt crystals?

I've seen 'recipes' for salt crystals, but also salt and vinegar crystals. I don't really understand what the difference is (other than one has vinegar). So, how does the lower pH of the solution affect the growth of salt crystals? And, just wondering, would lemon juice have a similar effect as vinegar?

Also, can anyone tell me what a 'non-solvent' is? Is vinegar or lemon juice a non-solvent of salt?
