What acid(s) could be used for the dissolution of FeO and/or how would I go about figuring this out or writing it chemically?

Most acids would dissolve FeO, giving salts. Depending on the acid, you might get partial oxidation to iron(III).

 

Assuming that you don't get any iron(III), then the reaction is simple:

FeO + 2H+ --> H2O + Fe+2.
