The oxygen atom on each carboxylate anion comes from the hydroxide ion, not the glycerol molecule. The nucleophilic attack by hydroxide ion is on the carbonyl carbon atom, not the glyceryl carbon atoms. And we know this from isotopic labelling experiments.
