In an experiment, we were told to make some casein by mixing vinegar with low cream milk. What is casein and the purpose of adding the vinegar?

I don't know why how the experiment exactly works.

I browsed several web sites and found some answers.

The vinegar (acetic acid) reacts with the milk to denature casein
