Beetroot experiment

Hi all :)

 

so i did an experiment on beetroot where i had to soak the beetroot peices in the organic solution 'methanol'.

 

I know that the lipid bilayer of the beetroot will get denatured and the pigment betacyanin will leak out but why/how would organic solvent allow the dye to leak from the vacuoles?

 

I am having trouble thinking about this.. :(

 

Can someone give me some information on this if they have done the same thing or similar ?

The vacuole membrane is also denatured by methanol and this makes sense since the vacuole holds waste products and thus the mechanisms across the two membranes should be similar and affected by the same chemicals.
