You can also slam energetic charged particles into a piece of metal. That much is on wikipedia

 

But this isn't really something that lends itself to a DIY student project. Making a large mount of x-rays as you'd get with an x-ray machine gets you into radiation safety issues, as well as high-voltage electronics issues.
