I was reading about an experiment about how chopped up potatoes release more catalase from their cells when placed in a boiling tube containing hydrogen peroxide than a lump of potato. Why is this? And unchopped potatoe only exposes the skin, chemical reactions will happen through it but the more surface of the potatoe that the peroxide has exposure to, the faster it can react.
